A comforting bake from the Shropshire Mysteries. Perfect with a cuppa—or warm with ice cream.

You will need
- 1 lb loaf tin
- 2 mixing bowls
- Rubber spatula
- Fork for mixing
Ingredients
- 4 oz plain flour
- 3 oz light soft brown sugar
- 1 tsp baking powder
- ½ tsp mixed spice
- ½ tsp ground cinnamon
- 2 ripe bananas
- 3 tbsp sunflower oil
- 1 egg (beaten)
- 3 tbsp raisins
- 1 tsp vanilla essence
Method
- Brush or rub the loaf tin with sunflower oil.
- Weigh out the dry ingredients and mix them together, then set to one side.
- Mash the bananas until smooth, then add the sunflower oil and beat together with a fork. Add the egg and beat again, then add the raisins and vanilla essence.
- Once all the wet ingredients are well combined, add the dry and mix well, using a fork or rubber spatula.
- Pour into a 1 lb loaf tin and bake at 165°C for 30 minutes. (Marianne usually checks it at 25 and it can take up to 35 depending on your oven. You'll know when it's done as it will be golden brown and springy to touch.)
- Leave to cool on a wire rack or serve warm with ice cream.
